It is highly soluble in water and ethanol. When mixed with sucrose, fructose, glucose, maltose, etc., not only does stevioside have a purer sweetness, but also the sweetness can achieve a synergistic effect. Stevioside is heat and light resistant, very stable within the pH range of 3 to 10, and easy to store.
The solution has good stability and remains stable even after heating treatment within the pH range of general beverages and foods. Stevioside shows little change when stored in an organic acid solution containing sucrose for half a year. It does not decompose in acidic or alkaline media, which can prevent fermentation, discoloration and sedimentation, etc.
Stevioside has a pure sweet taste, is refreshing and long-lasting, and its flavor is similar to that of white sugar, with a sweetness about 150 to 300 times that of sucrose. Among them, the purified rebaudioside A sugar has a sweetness approximately 450 times that of sucrose and a better taste.
