Stove Top Cooking With Stevia
Recipes for cooking with stevia.
-Chocolate Fudge
Leave out the sugar without sacrificing the indulgent taste and velvety texture of rich, chocolaty fudge.
Ingredients:
1/3 cup boiling water
1 3/4 teaspoon stevia extract
6 tablespoons unsalted butter, cut into small pieces
1 1/2 teaspoon vanilla extract
1 cup nonfat dry milk
6 oz. unsweetened baking chocolate, chopped
Directions:
Add stevia to 1/3 cup boiling water.
Mix until dissolved.
Add butter and stir until melted.
Add 1/2 tsp. vanilla extract and stir.
Pour into mixing bowl and mix in dry milk.
Melt chocolate over low heat.
Add to butter/milk mixture and stir well.
Stir in remaining 1 tsp. vanilla extract.
Foil line an 8" square pan and fill with fudge mixture.
Cover and refrigerate for about 1 hour; cut into 1 1/2" squares.
Keep refrigerated. For peanut butter fudge, stir in one cup peanut melted butter instead of chocolate. Use half chocolate and half peanut butter for chocolate/peanut butter fudge.
-Cranberry Relish with Pecans
Citrus fruits and apples add a delicious flavor to this cranberry relish, spiked with pecans for a satisfying crunch.
Serves: 2 cups

Ingredients:
1 tablespoon unsalted (sweet) butter
2 medium apples, peeled and finely diced
12-ounce package fresh cranberries
1 cup coarsely chopped pecans
1 cup fresh orange juice
2 tablespoons fresh lemon juice
3 tablespoons finely chopped orange rind
1 tablespoon finely chopped lemon rind
1 tablespoon cornstarch
1/4 teaspoon cinnamon
1/4 teaspoon white stevia powder
Directions:
Heat the butter in a large skillet over medium heat. Add the apples, cranberries and pecans, and sauté for about 10 minutes, or until the apples and cranberries are soft.
Place the remaining ingredients in a small bowl and combine well. Add this mixture to the cranberry mixture and stir gently.
Simmer the ingredients and continue cooking until the mixture thickens slightly.
Transfer the relish to a bowl and refrigerate for several hours before serving.
-Green and White Jade Salad
Crisp yet tender broccoli and cauliflower are dressed in a flavorful dressing of tahini, soy sauce, chili oil and more, making a quick and easy side that is also healthy and delicious.

Ingredients:
Salad:
8 ounces broccoli, cut into small florets
8 ounces cauliflower, cut into small florets
1 teaspoon sea salt
Dressing:
2 tablespoons tahini*
1 tablespoon apple cider vinegar
1 tablespoon tamari, or other soy sauce
1 teaspoon chili oil
1 teaspoon toasted sesame oil
1 teaspoon sea salt
4 drops stevia liquid concentrate, or to taste
*Tahini, or sesame seed paste, is available in most grocery stores.
Directions:
Bring a medium-sized pot of water to boil. Add the broccoli, cauliflower and salt. Blanch the vegetables for about 4 minutes, or until the broccoli turns bright green and is somewhat crisp yet tender.
Plunge the broccoli and cauliflower into cold water to prevent further cooking, then drain well in a colander. Arrange the vegetables on a platter.
Combine all of the dressing ingredients in a small bowl or glass jar and mix well. Pour the dressing over the vegetables and serve.
-Maple Syrup
Replace sugary, artificial syrup with this healthy alternative with a classic taste. Drizzle over pancakes and waffles, fresh fruit or a yogurt parfait.
Serves: About 3/4 cup

Ingredients:
3/4 cup filtered water
2 tablespoons plus 2 teaspoons vegetable glycerine*
2 teaspoons nonalcoholic maple flavoring
1/8 teaspoon white stevia powder
*Derived from coconut oil, vegetable glycerine is a sweet-tasting thickener. It is available in most health food stores.
Directions:
Combine all of the ingredients in a small bowl and mix well. You can also place the ingredients in a clean glass jar, cover with a lid, and shake thoroughly.
Warm the mixture in a small pan before drizzling it over pancakes, waffles or hot cereal.
-Savory Blackberry Cheese Sauce
Surprise your taste buds with a velvety cream sauce made with blackberries, cream cheese and savory garlic and onion. Stevia helps balance the flavors of salty and sweet to create an interesting sauce for rich meats or a delectable spread for warm biscuits.
Serves: About two cups
Ingredients:
1 tablespoon unsalted (sweet) butter
1 teaspoon chopped fresh garlic
1/4 cup finely diced red onion
1 tablespoon grated lemon rind
1/4 cup heavy cream
1/4 teaspoon white stevia powder
8-ounce package cream cheese or Neufchatel cheese, at room temperature
10-ounce package frozen blackberries, thawed, or 1 pint fresh
Directions:
Melt the butter in a medium-sized nonstick skillet over medium heat. Add the garlic and sauté 1 to 2 minutes, or until beginning to soften.
Add the onions and lemon peel to the skillet, and continue to sauté another few minutes until the onions are translucent.
Reduce the heat to low, and stir in the cream and stevia. Simmer, stirring frequently, just until the ingredients are well blended. Remove from the heat and set aside.
Place the cream cheese in a medium-sized mixing bowl, and whip with a fork until soft and fluffy. Stir in the garlic-onion mixture until well-combined. Fold in the blackberries.
Use immediately, or store in refrigerator up to four days.
For a sweeter, less savory sauce, simply eliminate the onions and garlic.
-Stove Top Apple Slices
Sweet and sour Granny Smiths make for a simple and quick dessert or sweet side dish when simmered with creamy butter, a dusting of cinnamon and a little stevia.
Serves: 6
Total Time: About 10 minutes
Ingredients:
4 large (or 6 medium) Granny Smith apples
1 1/2 teaspoon ground cinnamon
6 tablespoons unsalted butter
1/2 teaspoon stevia extract
Directions:
Peel and core apples.
Cut into 1/4" slices.
Mix apples and cinnamon in a medium bowl.
Over low to medium heat, melt butter in a 12" frying pan.
Add stevia to butter and mix well.
Add apple slices and reduce heat to low.
Cover and cook for 2 minutes.
Uncover and cook for 3 to 4 minutes more, stirring occasionally.
Sprinkle with powdered stevia if more sweetness is desired.
TIP: Serve with chopped walnuts or as a side with roast pork or poultry.
-Strawberry Preserves
Make perfectly-ripened strawberries last all year long by preparing this simple but delicious strawberry preserves with stevia. Enjoy it as a spread on biscuits and toast, or over vanilla bean ice cream with sweet whipped cream.
Serves: Approximately 96 one-tablespoon servings
Ingredients:
1 1/2 quarts fresh strawberries, hulled
4 teaspoons water
1 cup unsweetened frozen apple juice concentrate
2 teaspoons apple pectin powder
3/4 teaspoon powdered stevia extract
Directions:
Prepare jars for canning.
Clean and mash strawberries.
Combine strawberries and water in a medium sauce pan and bring to a boil.
In another small sauce pan bring fruit juice concentrate to a boil.
Place hot fruit juice in blender.
Add pectin powder and carefully pulse to dissolve powder.
Add pectin/juice mixture to boiling strawberries.
Stir vigorously 1 minute.
Stir in stevia extract.
Bring back to a boil and remove from heat.
Fill canning jars to 1/2 inch from the top and top with lids.
Set in water bath and process for 5 minutes.
Remove from water and let jars cool.
